Aviyal is an inevitable dish in Onam Sadya.Here I presents our Pathanamthitta Sadya Avial with my tips as well.Do try this wonderful recipe,you will get a flavourful avial with an authentic taste.

INGREDIENTS

Potato- one medium
Elephant yam/Chena- a small piece
Carrot – 1,medium
Drumtick/Muringakka- 3
Raw plantain/Nenthrakkaya- 1
Kovaykka- 3
Beans- 3
Snakegourd/Padavalanga- a medium piece
Vellarikka – a small piece
Onion- 1,medium
Green chilly- 2 to 3
Garlic- 1
Shallots/Kunjulli-12
Cumin seeds/Cheriya jeerakam
Coconut oil- as required
Curry leasves- 2 sprigs
Salt- to taste
Turmeric powder- 1/4 teaspoon
Scrapped coconut- one handful
Yoghurt/Thairu- 1 tablespoonful

METHOD OF PREPARATION:

Wash and cut the vegetables as shown in the video.(long and thin slices)

In a wide pan/Uruli add the sliced vegetables,onion,green chilly,coconut oil,salt and turmeric powder.

Mix well using your hands.

Close it with a banana leaf and cook for 10 minutes under low to medium flame.

Meanwhile,grind coarsely shallots, coconut, cumin seeds, garlic and set aside.

Check whether the vegetables cooked or not.

Add crushed coconut in the middle of pan and close with leaf.

Remove the leaf after 5 minutes and add youghurt.

Mix well and switch off the flame.

Add shallots, coconut oil, curry leaves and close the pan for 2 minutes.
