Mushroom Ularthiyathu/Kerala Mushroom Fry/Koon Ularthiyathu is a tasty dish and very easy to prepare.I love mushroom dishes,my favourite is mushroom ularthiyathu.This dish has an authentic flavor with the use of coconut oil.You could use any type of mushrooms for this preparation.This tastes same as beef fry.Do try this wonderful,finger licking dish and please your dear ones.

Mushroom- 250 gram
Onion,medium- 2 (Pearl onion/kunjulli- 1 cup,sliced)
Green chilly- 2 Nos,slit lengthwise
Ginger- a small piece, finely chopped
Garlic- 6-7 pods, finely chopped
Thengakkothu/Coconut Bits- ¼ cup
Pepper powder- ¾ teaspoon to 1.5 teaspoon
Kashmeeri Chilly powder- ½ teaspoon
Fennel powder/Perumjeerakappodi- 1 teaspoon
Turmeric powder- a pinch
Mustard seeds- ½ teaspoon
Salt – to taste
Coconut oil – as required
Curry leaves- 3 sprigs

In a vessel, take little warm water and a pinch of turmeric powder.Add mushroom to this about 5mnts. Wash and drain them.Slice it to small pieces and set them aside. In a bowl add mushrooms,a little chilly powder,turmeric powder salt and pepper powder.(nice masala). Mix it well using your hands. Now,mushrooms will be coated with masala very well and set it aside.
Heat oil in a pan on medium flame, add mustard seeds and wait till it crackles. Add coconut bits and sauté for two minutes. Add curry leaves,chopped onion, ginger, garlic and green chilly to this. Saute well till the onions turns transparent. Add sliced mushrooms to this, add salt, if required. Add fennel powder/perumjeerakam now. Add pepper powder, one sprig of curry leaves to this.

Stir well under a low- medium flame. Stir in between until you get its water dry and a fry texture. Turn off the flame now. Mushroom Ularthiyathu is ready. Serve this with hot boiled rice.
