Raw Mango Chutney in Telugu – How to cook Mamidi kaya pachadi by Tasty Vantalu

Today I am going to show you how to make Rayalaseema special mango chutney with sesame seeds and groundnuts.

This will go well with rice and if you are a non vegetarian, you can try egg omlet along with this and it’s going to be heaven. By the way this is not a pickle and you can use it within 1 or 2 days.

Let’s move to the cooking process

First we have to dry roast groundnuts. I am making this chutney with about 500 grams of raw mango we require about 4 tablespoons. Once they are fried keep them aside.

Take 2 tablespoons of sesame seeds and dry roast them. Look at them they are roasted and keep them aside.

Now add about 10 to 12 dry Red Chillies and roast them.

As shown in video I have pealed mango skin and cut them into small pieces, now lets put them into blender along with roasted red chilli roasted groundnut and roasted sesame seed and also add some salt and blend them. once they are crushed add some water and small size onion and blend it till chutney become slightly smooth.I dont like this chutney like a very smooth paste, i like the way it looks in the video.

For any chutney tempering is very important lets take the pan, once the pan is heated add some oil add 1 teaspoon mustard seeds and 1/2 teasponn cumin seeds once they start crackle add diced onions and saute them, now add curry leaves, turmeric powder and little salt. by adding salt our onions will cook faster, now add one pinch of hing into tampering , hing will give you that traditional flavour to our chutney. once our onions become transparent, lets add chutney into it and if required you can add some water for consistancy and check the taste and if required you can add some salt and mix it well and cook it for about 2 to 3 minutes in slow flame so that the raw flavour of mango will go away. I am adding 1 table spoon ghee and mix it well, hmm wow what a smell, beleive me you all going to love this. Now add corainder leaves on top of it, our Rayalaseema special Mango chutney is ready.
