ours south indian foods are naturally Gluten free, and can be Vegan. Here is another tasty gluten free Vegan recipe .
ngredients:
1 bitter gourd (Wash and cut the bitter gourd into small pieces, discard the seeds
that is around ¾ cup cut bitter gourd)
1 tsp split black gram /urad dal
1 tsp coriander seeds
1 tbsp oil for frying the bitter gourd and
2 tsp oil for seasoning
½ tbsp salt or salt to taste
key lime size tamarind soaked in water
around 2 tbsp powdered jaggery
1 tbsp red chilli powder( I am using mix of byadagi and guntur variety red chilli powder)
1/4 tsp jeerigemenasina powder( it is a variety of chilli, dried and powdered)
3/4 cup grated fresh coconut
for seasoning:
2 tsp oil
1/2 tsp mustard seeds
1/2 tsp urad dal/ black gram split
1 red chilli
1/2 cup water (quantity depends on the consistency of the chutney

Skip jaggery or add very less jaggery to make it more diabetic friendly recipe.
