Dapka Kadhi or Dumpling Kadhi is a filling kadhi made with fresh lentil dumplings. The Kadhi gets its name from lentil dumplings that are directly dropped and cooked in the boiling Kadhi. The Kadhi is Gujarat has many regional avatars – the rustic or rural Kadhi essentially made with churned buttermilk, is allowed to retain its sourness (with jaggery added only if needed), is thick and vivacious with a very intense flavor profile. While the urban version made with yogurt chaash is very mellow and pale looking. It has sugar added to it and is thinner than the rural counterpart.

Ingredients –
For Kadhi
1 cup Buttermilk (sour)
1 tbsp Gram Flour
1/2 tsp Turmeric Powder
1 tbsp Sugar
Salt
1/2 cup Water

1/2 tsp Oil
1/2 tsp Cumin Seeds
Fenugreek Seeds
Asafoetida
Curry Leaves
Green Chillies
1/2 tsp Red Chilli Powder

For Dapka
1 cup Masala Rice
4-5 tbsp Gram Flour
1/2 tsp Red Chilli Powder
1/2 tsp Turmeric Powder
Salt
Asafoetida
3-4 tsp Oil

Method: Let’s start with Buttermilk (sour) in the bowl with Gram Flour, Turmeric Powder, Sugar, Salt, Water. Next, mix it all together properly. Now switch on the gas add Oil in the wok to heat then add Cumin Seeds, Fenugreek Seeds, Asafoetida, Curry Leaves, Green Chillies, Red Chilli Powder. Next, add the Kadhi into the Wok and boil the Kadhi for 2 – 3 minutes. In the meantime let’s prepare Dapka for which add Masala Rice with Gram Flour, Red Chilli Powder, Turmeric Powder, Salt, Asafoetida
, and Oil on top mix it well with the hand, add water on regular intervals. Next, take a small portion of Dapka and put it in the Kadhi (as shown in the video), now cover the lid and cook it for 4-5 minutes on low flame. Next, switch off the flame and your Dapka Kadhi is ready to serve.
