Sabudana Khichdi Ingredients –
To Soak Sabudana
1 cub Sabudana ( Sago Rice ) / साबूदाना
Water / पानी

To Make Khichdi
2 -3 tsp Sugar / चीनी
Salt / नमक
Coriander Leaves / धनिये के पत्ते
3/4 cup Peanuts / मूंगफली
Lemon Juice / नींबू का रस
1 tbsp Oil / तेल
1 tsp Jeera / जीरा
6-7 Curry Leaves / करी पत्ते
Soaked Sabudana / साबूदाना
4 Green Chillies (chopped) हरी मिर्च (कटी हुई)
2 Boiled Potatoes (chopped) / उबले आलू (कटा हुआ)

Sabudana khichadi is an Indian dish made from soaked sabudana (tapioca pearls). It is typically prepared in the Indian states of Maharashtra, Karnataka, Uttar Pradesh, Madhya Pradesh, Rajasthan and Gujarat. In major towns like Mumbai, Pune, Indore, Bhopal, Jaipur and Nagpur, it is available as street food and is widely eaten throughout the year. It is the dish of choice when an individual observes a “fast” during Shivratri, Navratri, or a similar Hindu religious occasion. Sabudana Khichdi is one of the most popular comfort foods in India. It is often served with crunchy roasted peanuts and sautéed with potatoes using spices with a generous squeeze of lemon. It has a chewy texture and takes on the taste of its accompaniments. It is known as Sabudana Usal in the Vidarbha region of Maharashtra.
