It is Healthy, refreshing, crisp and satiating. You can pack it for Lunch box for yourself, your family and even your Kids. They would love this salad for all the vibrant colors.
INGREDIENTS:
• QUINOA – 1 cup, cooked
• Colorful vegetables (add according to your choice and availability. I have added 3 types of Bell peppers, Zucchini and Sweet Corn)
• Garlic chopped/minced – 5 to 6 cloves
• Cherry Tomatoes – 1 cup
• Paneer/Cottage Cheese – 1 cup
• Dash of salt and oregano
• Freshly ground pepper for seasoning
This salad is pretty versatile. You can add any vegetables and seasoning of your choice.
