Litti Chokha is a staple food of Bihar and Jharkhand, but is loved across the country. While Litti is a dough ball made up of whole wheat flour and stuffed with Sattu (roasted gram/chickpea flour) mixed with herbs and spices and then roasted over coal or cow dung cakes or wood, then tossed with lots of ghee, Chokha is a dip prepared by mashing boiled potatoes, tomatoes and eggplant together with some spices.

INGREDIENTS [ makes 12-14 littis]
FOR THE DOUGH:
• Atta/Whole Wheat Flour – 2 Cups (280 Gm)
• Baking Powder – ½ Tsp
• Oil – 2 Tbsp
• Salt – ¾ Tsp
• Water to Knead The Dough
FOR THE LITTI STUFFING:
• Sattu/Dry Roasted Besan – 1 ½ Cup
• Onion – 1 Medium Sized Chopped
• Ajwain/Carom Seeds – ½ Tsp
• Grated Ginger – 1 Tbsp (2 Inch)
• Green Chilies Chopped – 2 To 3
• Pickle/Pickle Masala – 1 Tbsp
• Mustard Oil – 1 Tbsp.
• Lemon Juice
• Coriander Leaves Chopped – 3 To 4 Tbsp.
FOR THE CHOKHA:
• Brinjal/Baingan – 1 (300 Gms)
• Tomato – 2 Medium Sized
• Boiled Potato – 2 Medium Sized
• Onion – 1 Medium Sizd
• Garlic – 5-6 Cloves
• Green Chilies – 2 To 3 (According To Taste)
• Coriander Leaves Chopped – 3 To 4 Tbsp
• Mustard Oil – 1 Tbsp
• Salt To Taste
