ಕರ್ಚಿಕಾಯಿ ಪಲ್ಯ | How to cook Crunchy and Tasty Karchikai/Kasarakaya/sanna Kakarakaya Fry by Shubha

Momordica Cymbalaria (in English) Karchikai (in Kannada), kasarakaya (in Telugu) is rarest and mostly available only in India.
It is rich in calcium three times higher than the bitter gourd. One of the best Medicines for diabetic people, also it is anti-ulcer, anti-cancer, has many health benefits.

Here a is quick recipe of How to cook Crunchy and tasty (Momordica) Karchikai fry.

Ingredients:

1. Oil 2 Table spoons
2. Mustard and Cumin seeds ¼ spoon
3. Onion medium size 1
4. Few Curry leaves
5. Tomato medium size 1
6. Pinch of Turmeric
7. Red chili powder 1 spoon/for taste
8. Salt for taste

Method:

Step 1:
Wash the nuts and cut of top and bottom parts of the nuts as shown in the video. Chop onion and Tomato.

Step 2:
Keep a pan and heat it, Add washed nuts and fry for few seconds and then add some Oil and deep fry it (it may take few mins depending on the size of nuts)
Step 3:
Keep a Karahi/Kadai and heat it, Add two table spoons of oil and add Mustard, Cumin Seeds, Curry leaves and finely chopped Onion. Fry 30 seconds.

Step 4:
Add Tomato and fry for a minute.

Step 5:
Add pinch of Turmeric, Salt, Red chilly powder and mix well. Finally add Fried nuts, mix well and fry for a min.
That’s all,
Karchikai fry is ready, Serve with Chapathi or Roti for better taste.
