Lau Shaker Torkari – Bengali Style Bottle Gourd Leaves with Stem Curry Recipe

Ingredients of Lau Shaker Torkari:
1. Potato.
2. Lau Shak / Bottle gourd leaves with stem.
3. Slitted green chilli (8 pcs).
4. Brinjal.
5. Pumpkin.
6. Pointed gourd.
7. Flat beans.
8. Cumin powder (½ tsp).
9. Red chilli powder (½ tsp).
10. 2 dry chilli
11. 2 bay leaves
12. Sugar (as per your taste).
13. Salt (as per your taste).
14. Mustard oil (6 tbsp).
15. Panch foron ( ½ tsp).
16. Bori (Sun dried lentil dumplings)
17. Turmeric powder (1 tsp).
Methods of how to cook Bottle Gourd Leaves Curry Recipe:
1. Add 6 tbsp mustard oil in hot pan.
2. Add ½ tsp panch phoron, 2 bay leaves, and 2 dry chilli. Fry for 15 sec.
3. Add all vegetables like Bottle gourd leaves with stem, potatoes, pumpkin, brinjal, pointed gourd, flat beans. Mixed it well.
4. Add 1 tsp of turmeric powder and 1 tsp of salt. Mixed it well.
5. Close the lid for 15 min. Cook in medium flame.
6. After that add 8 slitted green chilli, ½ tsp cumin powder, and ½ tsp red chilli powder. Mixed it well.
7. Close the lid again for 10 min. Cook in medium flame.
8. After 10 min stir it well. Close the lid again for 10 min. Cook in medium flame.
9. Add fried bori (Sun dried lentil dumplings), 1 tbsp sugar. Mixed it well.
10. Close the lid again for 5 min. Cook in medium flame.
11. Now cook in high flame. Taste the salt and sugar.
12. Add more as per your taste.
13. Now cook in high flame for 2 – 3 min.
14. Your recipe is ready.
15. Serve hot with hot steamed rice, roti, paratha.
