Kancha Aamer Tok Jhal Achar – Grandma’s Special Traditional Raw Mango Pickle Recipe

Ingredients of Kacha Aamer Tok Jhal Achaar / Aam Tel:
1. Kacha aam / Raw mango (500 gm).soak in water for 3 hours.
2. Dry red chilli (10 to 12).
3. Cumin seeds (2 tsp).
4. Panch phoron (1 tsp).
5. Coriander seed (2 tsp).
6. Fennel seeds (1 tsp).
7. Salt (½ tsp).
8. Turmeric powder (½ tsp).
9. Mustard oil (1 cup).

Methods of how to prepare Kacha Amer Achar:
1. Marinate the raw mango pcs with ½ tsp salt and ½ tsp of turmeric powder. Mixed it well.
2. Dry in sunlight for 2 or 3 days.
3. After 3 days you will make the achaar.
4. Now we make the roasted masala.
5. Heat the pan. Add 10 to 12 dry red chilli. Fry it for 30 sec in high flame.
6. Add 2 tsp cumin seeds, 2 tsp coriander seeds, 1 tsp fennel seeds, and 1 tsp panch phoron. Fry in medium flame.
7. Grind all spices in mixer grinder.
8. Heat a pan. Add 1 cup mustard oil. When boiling put off gas oven. Make it cool.
9. Add 4 tsp roasted masala and this oil in to dry mango. Mixed it well.
10. Pour all achaar in a glass jar.
11. Keep it in sunlight regularly.

After making Kacha Aamer Achar, you can serve it with Hot Steamed rice, Dal curry, Roti, Paratha, Jhal Muri, Masala Muri etc.
