Doi Katla – Popular Bengali Traditional Fish Curry Recipe Doi Maach

Ingredients of Doi Katla Recipe:
1. Katla Mach / Katla Fish (5pcs).
2. Onion paste (1 medium size).
3. Chopped onion (1 medium size).
4. Tomato paste (1 small size).
5. Ginger paste (3 tsp).
6. Slitted green chilli (5 pcs)
7. Garam masala
8. 1 Bay leaf
9. 1 Dry chilli
10. Cumin powder (¼ tsp).
11. Red chilli powder (¼ tsp).
12. Garam masala powder (¼ tsp).
13. Turmeric powder (1 tsp).
14. Salt (as per your taste).
15. Sugar (as per your taste).
16. Raisins (1 tbsp).
17. Mustard oil (for fry the fishes).
18. Refined oil (5 tbsp).
19. Plain yogurt (6 tbsp).

Methods of How to Prepare Doi Mach:
1. Marinate the fish with ½ tsp of turmeric powder and ¼ tsp of salt. Keep it for 5 to 10 min.
2. Add mustard oil in hot pan. Fry the fishes very well.
3. Add 5 tbsp of refined oil in hot pan.
4. Add garam masala, 1 bay leaf, and 1 dry chilli. Fry for 10 to 15 sec.
5. Add chopped onion. Fry in medium flame till become golden brown.
6. Add onion paste. Fry in medium flame for 1.5 min.
7. Add tomato paste. Fry in medium flame for 1min.
8. Add 3 tsp ginger paste. Fry in medium flame for 30 sec.
9. Add ¼ tsp cumin powder, ¼ tsp red chilli powder, ¼ tsp turmeric powder, ¼ tsp salt, and 1 tsp of sugar. Mixed it well.
10. Add 2 tbsp of water. Now cook in high flame for 3 min.
11. Add slitted green chilli and 1 tbsp raisins. Mixed it well.
12. Add 6 tbsp of yogurt. Mixed it well. Now cook in high flame for 30 sec.
13. Add 1.5 cups of water. When boiling add fried fishes.
14. Close the lid and cook for 5 min in medium flame.
15. After 5 min turn over the fishes and close the lid again. Cook for 5 min in medium flame.
16. Taste it. Add salt and sugar if required. Now cook in high flame for 2 min.
17. Add ¼ tsp garam masala powder. Mixed it well.
18. Put off your gas oven. Close the lid for 5 min.
19. After 5 min your Doi Mach recipe is ready. Serve hot Doi Katla with hot steamed rice.
