Ingredients of Ilish Fish Pulao:
1. Gobindo bhog Rice (250 gm/2 cups).
2. Ilish Maach / Hilsa fish (4 pc).
3. Plain yogurt (½ cup).
4. Cumin powder (1 tsp).
5. Ginger paste (1.5 tsp).
6. Turmeric powder (½ tsp).
7. Red chilli powder (½ tsp).
8. 2 Bay leaves
9. Garam masala
10. Cashew nuts (1 tbsp).
11. Raisins (1 tbsp).
12. Ghee (1 tbsp).
13. Garaam masala powder (¼ tsp).
14. Salt (as per your taste).
15. Sugar (as per your taste).
16. Refined oil (1 tbsp).
17. Mustard oil (3 tbsp).
Step By Step Recipe of Ilish Macher Pulao:
1. First take a bowl. Add ½ tsp turmeric powder, ½ tsp red chilli powder,1 tsp cumin powder, ½ tsp salt, 1 tsp sugar, and 1 tsp ginger paste. Add some water and make smooth masala paste.
2. Now heat the pan and add 3 tbsp mustard oil in it.
3. Turn the flame low and add the masala paste. Cook it for 30 sec in medium flame.
4. Add ½ cup yogurt and cook for 1 min in medium flame.
5. Add fishes in it. Mix the masala with fish.
6. When boiling cover it for 5 min in medium flame. Turn over the fish after 3 min and cover it again.
7. Then put of the gas oven and close the lid for 5 min. After 5 min keep it in another bowl.
8. Now heat a pan and add 1 tbsp ghee and 1 tbsp refined oil in it.
9. Add 2 bay leaves and garam masala. Fry it for 10 to 15 sec.
10. Add cashew nuts and raisins. Fry it for 30 sec.
11. Add gobindo bhog rice. Mix it well. Fry in medium flame.
12. Add ½ tsp ginger paste. Mix it well.
13. Add fish gravy. Mix it well.
14. Now fry it for 1 min in high flame.
15. Add 4 cups hot water. When boiling adds ¼ tsp salt and cover it for 5 min in medium flame.
16. After 5 min add ¼ tsp garam masala powder and mix it well.
17. Add fishes and cover it again for 5 min in low flame.
18. After 5 min check the rice.
19. Put off gas oven and cover it for 5 to 10 min.
20. After 10 min serve hot Ilish fish pulao.
