Here is Bengali style easy Kuler Achar Recipe in Bangla. Kuler Achar is one of the popular mouthwatering Bengali pickle recipe. It is also known as Boroi Achar. In our childhood school life we love to eat Kuler achar at tiffin time and it is our one of the memorable moment which we passed out. This Boroi pickle is also available in Mela.
Ingredients:
Kul / Boroi / Jujube – 500 gm
Jaggery – 500 gm
Salt – 1 tsp
Dry Red Chilli – 6 pcs
Cumin Seeds – 1 tbsp
Fennel Seeds – 1 tbsp
Coriander Seeds – 2 tbsp
Achar Masala / Pickle Masala – 3 tbsp
Black Salt – 1/2 tsp
Methods of how to make kuler achar:
1. At first take 500 gm Kul
2. Add Boil water and 1 tsp salt on Kul
3. Soak for 30 mins
4. For pickle masala heat up a pan and add 6 Dry Chillies,
5. Fry for 1 mins on high flame
6. Turn the flame to low and add 1 tbsp. Whole Cumin, 1 tbsp. Fennel Seeds, 2 tbsp. Whole Coriander
7. Roast on low flame for 30 secs while stirring to prevent burning
8. When you get a sweet aroma turn off your oven and blend
9. Now strain all the Kuls and put them in a bowl
10. After that add 1/3 cup Water in a pan
11. When the water starts boiling add 400 gm Akher Gur/Jaggery
12. You can only use jagger to make this pickle not sugar
13. Cook on high flame while stirring till the jaggery melts and starts boiling
14. You can add more or less jaggery as per taste
15. When it completely melts boil for 5 mins on medium flame
16. After boiling for 5 mins while stirring add all the Kul
17.Cook on high flame while stirring continuously
18. Cook till all the Kul is boiled and the jaggery dries out
19. After 15 mins of cooking on high flame while stirring the Kul is boiled then add 1 tbsp Pickle Masala and mix well. Also add 1/2 tsp black salt.
20. Mix and cook on high flame while stirring
21. Cook for 1 mins on high flame and your Kul Pickle will be ready
22. Turn off your oven and serve after it cools down
23. Everyone’s favourite Kul Pickle is ready to serve
