With that out of the way, today we will see how to prepare
Vegetable kootu

Ingredients:

Vegetables:
Beans : 200gms
Carrots:2
Potatoes:3
Tomatoes:2
Toor dal:1 cup
Ground nuts : 1 cup
Sambar Powder: 4 to 5 tsp(https://youtu.be/rqbc-Mzq6oo)
Turemeric :1/2 tsps
Water : 2 cups for the dal to get cooked
Poppy seeds :1 tsp
Mustard:1/2 tsp
Oil:2 tsp
Dry coconut:1/2 cup(grated)
Tamarind : a small lemon size(washed and soked in water)
Asafoetida : less than 1/4 tsp
Coriander leaves : 1 cup finely chopped
Procedure:

Wash toor dal and transfer to a pressure cooker.Add all vegetables and tomatoes.Add ground nuts and turmeric.Add about 2 cups of water and pressure cook for 2 whistles.
To prepare masala for the kootu
Take a mixer jar,add sambar powder,grated coconut,poppy seeds and tamarind along with the water and grind to a smooth paste.
Take a kadai, heat it up and add oil.when oil is heated, add mustard and allow it to crackle. Add the grinded paste mix it well and bring it to boil.Add salt and mix it well.To this add the cooked dal and vegetable.mix it well.Add finely chopped coriander leaves and mix it well.
Tasty and healthy kootu is ready.Serve it hot with rice.
