Most of the food here are made keeping the Indian Palette in consideration to keep the recipe as authentic as possible, although these foods may be what any South Asian may relish. It’s important to keep in mind the spices used must be taken into account by the viewer and cook according to their threshold, preference and health conditions.
With that out of the way, today we will see how to prepare
Ridge Gourd Curry/Gravy/ hulisoppu /heere ಕಾಯಿ ಹುಳಿ ಸೊಪ್ಪ / pulagura

Ingredients:
Ridge gourd : 250 gms(cleaned and cut into small cubes)
Toor dal : 1 cup (washed and soaked for 10 mins)
Turmeric :1/2 tsp
Tamarind : a small lemon size
Green chilies :4
Coriander leaves : handful finely chopped
Coriander seeds : 1 tsp (dry roasted)
Cumin seeds:1/2 tsp (dry roasted)
Fenugreek seeds : ¼ tsp (dry roasted)
Fresh coconut:1/2 cup grated
Water : 2 cups
Salt to taste
Procedure :
Take a pressure cooker, to this add toor dal, turmeric, ridge gourd cubes, tamarind, green chilies, coriander seeds, cumin seeds, fenugreek seeds and water. Pressure cook this for 2 or 3 whistles.
Once the dal is cooked, take out from the pressure cooker and strain the excess water and this water can be collected to prepare rasam. Allow the dal and vegetable to cool for a while.
Now transfer the contents to a mixer jar and to this add the coriander leaves, fresh coconut and salt and grind it to a smooth paste. Serve it hot with rice and ragi mudde.
