Most of the food here are made keeping the Indian Palette in consideration to keep the recipe as authentic as possible, although these food may be what any SouthAsian may relish .It’s important to keep in mind the spices used must be taken into account by the viewer and cook according to there threshold, preference and health conditions.
With that out of the way, today we will see how to prepare
Pudina/Mint Veg Pulao
Ingredients:
Rice – 2 cups
Water – 4 cups
Green Chillies – 3
Onion (Chopped) – 1
Ginger finely grated/chopped – 2tsp
curry leaves – few
Dried Red Chillies – 2
Fresh Grated Coconut – 1 cup
Oil – 2 tsp
Salt – to taste
Cumin Seeds – 1 tsp
Pudina/Mint Leaves – 1 cup
Corriander Leaves finely chopped – handful
Cinnamon Sticks – few
Cloves : 4 – 5
Bayleaf – 1
Vegetables:
Beans
Carrots -2
Potato – 1
Capsicum – 1
Can add other vegetables of your choice
Procedure:
Make a paste with mint:
Take a mixer jar
Add mint leaves, corriandr leaves, grated coconut, 3 green chillies, ginger and 1 onion chopped
Add Little water.
Grind to a smooth paste.
Grinded mint paste is ready.
Take a pressure cooker
Add oil
After oil has heated up,add Cumin seeds, red chillies and curry leaves.
Saute this for a while
Add bayleaf, cinnamon sticks and cloves
Saute this for a while
Add vegetables : Beans, Capsicum, Carrot and potato.
Saute the vegetbales thorouhly.
To this add grinded mint paste and give a through mix
After it has mixed complerely, Add 4 glasses of water and mix it well.
Add Salt to taste. Mix well. Add Salt if required.
Allow it to boil.
Once water is boiling, add rice and mix well.
Close the lid and pressure cook it for 3 whistles.
Hot and tasty mint vegrtable pulao is ready.
