Most of the food here are made keeping the Indian Palette in consideration to keep the recipe as authentic as possible, although these foods may be what any South Asian may relish. It’s important to keep in mind the spices used must be taken into account by the viewer and cook according to their threshold, preference and health conditions.

With that out of the way, today we will see how to prepare

Lemon Rice
================
Ingredients:

Rice – 1 cup
Water – 2 cups
Oil – 2 tablespoons
urud Dal – 1 teaspoon
Bengal Gram Dal – 1 teaspoon
mustard Seeds – 1 teaspoon
Ground nuts – half a cup
Cumin seeds – 1 tea spoon
Turmeric – 1 teaspoon
Salt – to taste
Corriander leaves finely chopped – handful
Green Chillis finely chopped – 5
Curry Leaves – few
Lemon – 1

Procedure:

Rice Preparation:
Wash Rice and for 1 cup of rice add 2 cups of water and pressure cook it for 3 whistles.

Meanwhile, cut the lemon and squeeze the juice.

Prepare Seasoning:
Take a kadai and pour oil. Heat it up.
Once oil is heated. Add mustard seeds, urud dal(Black Gram), bengal gram dal. Sauté for a while till dal changes color.
Add cumin seeds, groundnuts and turmeric. Mix and sauté well till groundnuts changes color to golden yellow.
Once it starts spluttering, add green chillies and curry leaves and mix it well.
Close lid and allow ground nuts to become soft (simmer for around 2-3 minutes).

Once this is done. Add hot rice to it and mix well. Add salt as required, coriander leaves and mix well.
After rice has cooled down, Add lemon juice. Add salt and lemon juice if required.
Tasty lemon rice is ready.
