How to make tasty and spicy Gongura chutney/Gongura Pachidi Recipe/Andhra special/Sorrel leaves

How to prepare simple and tasty Gongura chutney/Gongura pachhadi/gongura /Andhra style special recipe

With that out of the way, today we will see how to prepare

Gongura Pachadi

Ingredients:
Gongura(sorrel leaves ) : 200 gms
Red Chilies(dried) : 25-30
Corriander seeds :1 cup
Cumin seeds :1/2 cup
Fenugreek seeds :1 tsp
Ground nuts :1/2 cup
Asafatida :1 tsp
Oil : 2 tbsp
Turmeric :1/2 tsp
Salt :to taste

Procedure:

Take a kadai and dry roast corriander seeds and keep it aside.Dry roast cumin seeds and keep it aside.Add fenugreek seeds and roast till it changes colour and keep aside.Now add ground nuts and keep aside.Now add oil to the kadai and heat it up.Add mustard and allow it to crackle.
Add 1/2 tsp of asafatida and add red chillies and saute this till the chilies puffens up.
Add sorrel leaves(gongura) and cook it softly.Add turmeric when the leaves are half cooked.
mix well and cook till the leaves are cooked softly.Allow it to cool.Grind the roasted ingredients
with salt first to a fine powder and to this add the cooked gongura leaves and grind it to a smooth paste.
For seasoning
Take a small kadai, add oil and heat it up.Add mustard,asfatida and curry leaves and pour it on the chutney and mix well.Tasty and spicy gongura is ready to serve.
