Most of the food here are made keeping the Indian Palette in consideration to keep the recipe as authentic as possible, although these foods may be what any South Asian may relish. It’s important to keep in mind the spices used must be taken into account by the viewer and cook according to their threshold, preference and health conditions.
With that out of the way, today we will see how to prepare
Onion Pakoda/Pakora

Ingredients:
Gram flour : 1 cup
Rice flour : ½ cup
Onions : 2 medium size(finely cut)
Coriander leaves :1/2 cup(finely chopped)
Curry leaves : 10 to 15
Garam masala powder : ½ tsp
Red chilly powder : 1 tsp
Asafetida :less than ¼ tsp
Salt to taste
Water
Oil for deep frying (approx. 200 ml)
Procedure:
Take a kadai(thick bottom pan) and heat it up, add oil and heat it for deep frying. In the meantime, In a big vessel add gram flour, rice flour, salt, garam masala powder, red chilly powder and salt and mix well. To this mixture add finely cut onions and mix well, so that all the onion pieces are coated with the flour.
Now add coriander leaves and curry leaves and mix well, add water little by little and mix well to form a thick batter. Check if the oil is heated up. Now drop the batter into oil slowly and deep fry them.
Once they turn crisp and golden brown color remove them from oil and serve it hot.

I am going to try to adapt this recipe for an air fryer, I will start by substituting rice flour for the flours seen here which I dont have and go from there. Of course it wont be ‘authentic’ but hopefully it will be tasty.
