Most of the food here are made keeping the Indian Palette in consideration to keep the recipe as authentic as possible, although these foods may be what any South Asian may relish. It’s important to keep in mind the spices used must be taken into account by the viewer and cook according to their threshold, preference and health conditions.

With that out of the way, today we will see how to prepare
Brinjal/Eggplant Dal

Ingredients:

Brinjal/Eggplant : 5 medium size
Oil : 2 tbsp
Mustard : ½ tsp
Turmeric :1/2 tsp
Toor dal : 2 cup
Water : 4 cups
Coriander seeds : 3 tbsp
Dry coconut :3/4 cup grated
Dried red chilies:8
Asafatida :1/4 tsp
Tamarind : a small lemon size
Ghee :1 tsp
Salt to taste

Procedure:
Take 5 medium sized brinjals and cut them into small pieces and put in turmeric water for 10 mins. Putting the brinjals in turmeric water stops them from changing color. Now take a kadai add oil. When the oil is heated add mustard, after mustard crackles add the cut brinjal and stir well and allow it to get cooked softly. In the meantime, take a pressure cooker and add toor dal, turmeric and water and pressure cook for 3 whistles. Now take a mixer jar, to this add coriander seeds, grated coconut, red chillies, asafetida and tamarind and grind it to a smooth paste by adding little water. Now check if the brinjal is cooked. Once cooked add the grinded paste and little water (1/2 cup)and mix it well .cook for 5 to 7 mins till the raw smell of the paste is gone .To this add salt and cook for another 5 mins .Now mash the cooked dal and mix it with the brinjal. Cook for another 5 mins and add ghee and mix well. Hot Pappu is ready to serve.
