Murthabak, mutabbak or matabbak, also mutabbaq, is a stuffed pancake or pan-fried bread which is commonly found in Saudi Arabia and Yemen. It can be plain, or stuffed with mutton, chicken, egg, or even veggies.

1. 2 cups of all-purpose flour
2. add 50 g grated butter (for easier mixing)
3. salt as required
4. mix well
5. add ¾ cup of lukewarm water in parts and knead well
6. knead well for atleast 5 minutes
7. close with lid and keep aside for 30 minutes
to prepare filling:
8. take a chicken breast slice into small chunks and put into a pressure cooker
9. ½ tsp black pepper powder
10. ½ tsp turmeric powder
11. ½ tsp garam masala
12. salt as required
13. ½ cup water
14. close with lid, place weight and cook until 4 whistles
15. After cooking, turn on the flame and evaporate the stock
16. when evaporated, turn off the flame and shred the pieces
17. red, yellow, green bell peppers
18. 1 onion
19. corainder leaves
20. slice as required
21. transfer the veggies to a bowl and add salt as required
22. 1 tsp black pepper powder
23. 1 tsp oregano
24. ¼ tsp garam masala
25. add 2 eggs
26. mix well
27. knead the dough again and divide into balls
28. use the roller pin to flatten the dough to thin sheets as shown
29. place the shredded chicken at the center of the sheet
30. stir the veggie mix well and place at the centre
31. fold into an envelope as shown
32. heat oil on a hot skillet
33. reduce flame and shallow fry the filled sheets
34. flip intermittently and cook until ready
