Dum Biriyani has always been the heartthrob of majority foodies. This Pressure cooker Dum Biriyani is made with some special ingredients to enhance both flavour and aroma. The meat could be mutton or chicken, but preferably chicken.

1. s2 kg chicken cut into 16 pieces (medium sized)
(2 kg chicken for 1 kg rice)
to marinate:
2. 2 tbsp ginger-garlic paste
3. ½ tsp turmeric powder
4. 3 tsp Kashmiri red chilli powder
5. 1 tsp coriander powder
6. 1 tsp garam masala powder
7. salt as required
8. chopped coriander and mint leaves
9. extract of 1 lemon
10. add 3 tbsp thick curd
11. mix well
12. keep aside to marinate until the rice cooks
13. 1 kg parboiled basmati rice
14. wash well and soak in excess water
15. soak this until the water boils
16. heat excess water in a large pan
17. add salt as required to cook the rice
18. slice 4 medium sized onions
19. heat 4 tbsp oil in a hot pressure cooker
20. add 1 tsp fennel seed
21. 5 cloves
22. 3 cinnamon stick
23. 4-5 cardamom
24. add the onions and saute well
25. when the water has boiled, drain the rice and add
26. do not tightly stuff the rice, there should be ample space in the pan
27. add 3 whole green chillies
28. do not cook the rice completely, cook until only 70%
29. melt 1 tbsp ghee
30. reduce flame and add 2 tbsp bombay biriyani masala (optional)
31. rice has cooked to 70%, now drain well
32. the onions has saute well, now add the chicken
33. mix well for 5 minutes
34. add 2 whole green chilli
35. ~¼ tsp black pepper powder
36. 1 tsp kasuri methi
37. 1 tbsp of prepared ghee mixture
38. chopped coriander leaves
39. add the drained semi-cooked rice
40. reduce flame to low
41. dissolve saffron in ½ cup milk
42. pour this over the rice
43. pour 1½ cup boiling water
44. add the remaining ghee mixture
45. add pineapple essence (optional); add fresh pineapple if available
46. 2-3 drops of permitted yellow food colour (optional)
47. add chopped coriander leaves
48. chopped mint leaves
49. close with lid, place weight and cook until 1 whistle on low flame
50. now turn off the flame and wait until the pressure is realeased
51. after the pressure is released, takeoff weight and carefully open the lid
52. seperate the rice using a fork
53. while serving, move the rice to a side and serve with chicken as required
