Description :

Gutti vankaya curry recipe is a popular dish in South India.

Required ingredients

1.baby eggplant/ baby brinjals-300gm.
2. onion -1/2
3. Ginger (peeled and shopped)-3inches.
4. garlic peeled-5
5. curry leaves
6. green chilli splits-4
7. chopped onion-1/2
8. Chopper tomato-1
9. chopped coriander leaves
10. peanuts-2tsp
11. salt to taste
12. red chilli powder-1tsp
13. turmeric powder-1/2tsp
14. coriander powder-2tsp
15. Garam Masala-1tsp
16. poppy seeds (gasagasalu)-1tsp
17. cumin seeds-1/2tsp
18. mustard seeds-1/2tsp
19. seesame seeds(nuvvulu)-1tsp
20. cooking oil-4tsp
21. cumin powder-1/2tsp.

Methed.

1. put the chopped tomato in the grinding jar.Graind it
2. take it out in a bowl & keep it aside.
3. cut the brinjals into four parts, leaving them attached only at the stem
4. put it into the water to ensure that it doesn’t turn black
5. leave it in the water.
6. Turn on the flame, heat a Pan and add1 tsp of oil.
7. once the oil is heat reduce the flame to medium
8. add peanuts fry it 2 minutes on medium
9. add chilli splits, garlic cloves ,Ginger pieces and onion.
10. Fry it 2 minutes on medium flame.
11. add sesame seeds & poppy seeds ,Fry it few seconds on low flame
12. turn off the flame let it cool down
13. put the fried ingredients in the grinding jar
14. grind it into paste (add little water if needed)
15. smooth masala paste is ready,Transfer it into a bowl
16. add red chilli powder -1/2tsp,
add salt – 1/2tsp,
add Turmeric powder -1/4tsp
add coriander powder – 1/2tsp,
add Garam Masala – 1/2tsp,
add jeera powder -1/4tsp & Mix it well.
17. stuffing masala is ready.
18. take one brinjal and stuff the masala inside
19. keep it aside in a plate
20. repeat the process to stuff all the brinjals.
21. keep this remaining masala for gravy preparation
22. turn on the flame, heat the same pan and add oil
23. once the oil is heat reduce the frame to medium
24. add mustard seeds, cumin seeds, Chopped onions and curry leaves, fry it few seconds on medium flame
25. reduce the flame to low , add turmeric powder and red chilli powder
26. add the remaining masala paste and fry it few seconds on low flame
27. add tomato puree and mix it well
28. cover the pan and cook it for 2 minutes on medium flame
29. add stuff brinjals one by one.
30. mix it once with masala paste
31. cover the pan and cook it for 5 minutes on low flame
32. after 5 minutes open the lid, flip all the brinjals once to cook other side
33. cover the pan and cook it for another 5 minutes on low flame
34. after 5 minutes open the lid, mix it once as shown in the video
35. add 1.1/2 glass of water (adjust the water quantity as per your like)
36. increase the flame to medium, cover the pan and cook it for 5 minutes
37. after 5 minutes open the lid. gently mix it once as shown in the video
38. add remaining dry masala powder & gentle mix it.
39. cover the pan and cook it for another 5 minutes on medium flame
40. after 5 minutes to open the lid and flip the brinjals ones
41. check it the brinjals are cooked or not
42. the brinjal are cooked properly, add coriander leaves, and turn off the flame
43. cover the pan and leave it for 2 minutes
43. stuffed brinjal curry (Gutti vankaya Kura) is ready to serve.
44.take a serving bowl and garnish with coriander leaves.
45. Tasty and spicy eggplant masala curry, Gutti vankaya Kurain Andhra style ,stuffed brinjal curry (or) brinjal masala curry /stuffed brinjal gravy curr/ stuffed baby eggplant curry is ready to enjoy.
