Malpuri-malpua is popular sweet dish which id cooked in every festival.This is extremely popular desserti in north India.
Required Ingredianta
All purpose flour(maida)-1cup(120gm)
condenced milk -2tsp
boiled milk -200gm
sesame(nuvvulu) seeds -1tsp
suji(rava/sooji)semolina -2tsp
baking powder-1/4tsp
Ghee -150gm
sugar-1cup(200gm)
cardamoms-6
water
Preparetion
Take a big bowl,add maida in it& add sooji,cardamom powder, sesame seeds(nuvvulu),baking powder& mix it
add condenced milk& mix it
Add boiled milk,add little milk at a time,mix it
Make a semithick batter
add water/milk if needed,Do not make the batter thick,Make the consistency Like this,cover it & leave it for 4-5 hours,After 5 houres mix the batter once .
Turn on the flame,heat a pan & add sugar& water,stir it,Let the sugar dissolve completly(keep the flame low) Let it boil 8-10 minutes(keep stirring),sugar syrup is ready,keep aside.
heat a kadai, keep the flame on low& add ghee,let it heat completly.
once ghee is heated reduce tha flame to low& put 1 drop of batter to check the temperature of oil Take a serving spoon .ladle& mix it the batter once,gently pure 1ladle of batter in the center of kadai fry it for a minute on low flame,flip it&fry other side for a minte on low flame,fry it till it turns golden brown from both the side, take it out from the ghee.
Repeat the same process to fry remaining batter/pua/puries.
malai puri/malpua/malpuries are fried now,Remove the ghee pan from the gas stove& put the eugar syrup pan a gain,let the syrup heat sugsr syrup consistency,Once the sugar syrup start boiling turn off the flame,put the fried pua into the syrup gently dip it ,soak the pua in 30minutes,After 30minutes take it out in a plate ,Malaipuri/malpua/malpuri is ready.
