Description :

Ingredients:
1/4 cup Peanuts
20 Almonds
20 Cashew Nuts

1 tbsp Coriander Seeds
2 tbsp Pumpkin Seeds
2 tbsp Muskmelon Seeds
1 tbsp Flax Seeds
1/4 cup Sesame Seeds
1/2 tbsp Jeera (Cumin Seeds)

10 Dry Red Chillies (adjust to your spice preference)
4-5 Garlic cloves
Curry Leaves (a handful)

1 tbsp Oil
Salt to taste
Tamarind (small piece)

Instructions:
1. Roasting the Nuts:
Heat a pan on medium flame.
Add the peanuts, almonds, and cashew nuts.
Roast them for about 5 minutes, continuously mixing until they become slightly brown and fragrant.

2. Roasting the Seeds:
In the same pan, add coriander seeds, pumpkin seeds, muskmelon seeds, flax seeds, sesame seeds, and jeera (cumin seeds).
Roast them for about 2 minutes on low flame, stirring constantly until they release their aroma. Be careful not to burn them.

3. Preparing the Spices:
In a separate small pan, heat 1 tablespoon of oil.
Add dry red chillies, garlic cloves, and curry leaves to the hot oil.
Fry them for a couple of minutes until the garlic becomes slightly brown and the curry leaves turn crispy.

4. Grinding the Ingredients:
First, grind the roasted peanuts, almonds, and cashew nuts into a coarse powder in a mixer or food processor.
Then, add the roasted seeds and fried red chillies, garlic, and curry leaves to the mixer.continue grinding until you get a fine powder.
Add salt to taste and the small piece of tamarind. Blend again until everything is well combined.
Finishing Touch:
Pulse everything together for a few seconds until all the ingredients are mixed well, and you have a uniform texture.
Cool and Store:
Allow the Protein Rich Dry Nuts Karapodi to cool down to room temperature.
Once cooled, transfer it to an airtight container for storage.Consumer up to one month
You can enjoy this protein-rich karapodi as a condiment with rice, dosa, idli, or any of your favorite dishes. It’s a delicious and nutritious addition to your meals!
