Mango Stuffed Red chilli Pickle /Bharwa Lal Mirch ka Achar
Ingrediants….
1. Mustard oil /sarso ka tel -250ml
2. Sauf /Fennel seed -3ts full
3. Ajwain /carom seed -1/2ts
4. Methi dana /Fenugreek seed -3ts
5. Jeera /Cumin -1ts
6. Yellow Mustard Daal -3ts
7. Red Chilli -250gms
8. Green Mango -1
9. Salt – 2 1/2tb
10. Amchur /Dry mango powder -2ts
11. Haldi /Turmeric -1 1/2ts
12. Hing /Asafoetida -1/2ts
13. Kashmiri Red chilli powder -1ts
14. Kalonji /Onion seeds-1ts
Method….
1. Heat a Mustard oil in kadai…and When you See the Smoke coming out..close the gas..let it cool down Completly…
2. In a pan Dry rost sauf, Ajwain, Methidana, Jeera in a low flame for 1-2min. then cool it. Take a Mixer jar add rosted spices and Yellow mustard daal and grind into the coursely powder..
3. Take a Red chilli wipe and dry then cut the edges and collect seeds..
4. Take a Green Mango wipe and dry. cut long thin strips then stuff this Mango into the Red chilli.
5. Take a bowl add grind spices , add Salt, Amchur, Haldi, Hing, Kashmiri Red chilli powder, Kalonji and mix it add 2tb cold mustard oil and mix it properly…this masala ..stuff it in Red chiili nicely..
6. Take a clean dry glass jar put a one layer of stuff chilli.. add oil and again put one layer of stuff chilli and pour all oil… close tightly cover with cotton cloth and keep for 1month in Sunlight… then u can use 3-4years….
