Ingrediants….
1. Basmati Rice – 2cups
2. Onion thin slices – 4 nos.
3. Oil
4. Cashew nut / Kaju -1/4cup
5. Raisins / Kishmish -1/4cup
6. Peas -1cup
7. Beans -7/8 nos.
8. Onion -1
9. Capsicum -1
10. Carrot -2
11. Potato – 6/7 nos.
12. Milk -1/4cup
13. Saffron / Kesar /Zaffron -20/25 nos.
14. Curd -200grm
15. Clarified Butter /Ghee – 2tb
16. Green cardamom / Hari Ilaychi -3nos.
17. Black cardamom / Badi Ilaychi -1nos.
18. Cloves / laung -3nos.
19. Cinnemon / Dalchini -2nos.
20. Star Anis / Chakri fool -1
21. Cashew nut /Kaju -3/4nos.
22. Black Cumin / Shahi jeera -1ts
23. Bayleaf / Tejpatta -2nos.
24. Ginger Garlic paste -1tb
25. Salt to taste
26. Turmuric -1/2ts
27. Kashmiri Red Chilli Powder -1/2ts
28. Biryani Masala -1tb
29. Corriander
30. Mint Leaf
31. Green Chilli -2
32. Water -2cup
Method…
1- Take basmati rice and soak in water for 30 min…
2- In a hot oil fried onion, cashew nut and raisins…
3- Take a hot milk in a bowl add saffron mix it..
4- Take curd and wisk it..
5- In a cooker add Clarified Butter, Green cardamom, Black cardamom , Cloves, Cinnemon, Star Anis, Cashew nut, Black cumin, Bayleaf fry in medium flame then add Onion and Ginger garlic paste saute till onion get soft… Then add Potato and other Vegetables and fry for 2min. add Salt to taste, Turmuric, Kashmiri Red chilli powder and Biryani masala saute for 1min. then keep flame in low and add curd mix it , add Corriander ,Mint Leaf mix..then add crispy fried onion, soak rice, again fried onion, green chilli, Corriander ,Mint leaf, fried cashew and raisins, sprinkle biryani masala, saffron milk,and 1tb Ghee put everything by layerwise…add water cover and keep flame in simmer for 25-30min.Our Veg Hydrabadi Veg Biryani is ready….to serve…
