Ingrediants…
1. Green Mango -1kg
2. Haldi /Turmeric -2tb
3. Salt -2tb+1/4cup
4. Sauf /Fennal seeds -1/4cup
5. Methi dana /Fenugreek seeds -1tb
6. Yellow Mustard daal -100gms
7. Ajwain /Carrom seeds -1ts
8. Rai /Mustered Oil -250ml
9. Red chilli powder -4tb
10. Kaloungi -1ts
11. Hing /Asafoetida -1/2ts
Method…
Take a Green mango, clean and dry, then cut into pieces, put it into a bowl, add 1tb Haldi, 2tb salt… mix it. cover for 2hr.
Then strain the water and Keep this mango for 5/6hr for drying. under the fan or outside the sun. Heat a Oil in smoky hot then cool. In a pan add Sauf, Methidana dry roast in low flame , then keep side , Ajwine dry roast keep side, Salt dry roast keep it side and cool it. In a mixi jar add sauf methidana, and yellow mustered daal grind in , course powder, In a bowl add dried Mango, grind course powder, 1tb Haldi, Red chilli powder, Kaloungi, Hing, Fried Salt, Ajwaine mix it well, then add Oil mix. You can store upto 2-3 years.
