Let’s get started!
1 medium cauliflower (gobi), cut into florets
2 medium potatoes (aloo), peeled and cubed
1 medium onion, finely chopped
2 medium tomatoes, finely chopped
2-3 green chilies, slit (adjust to taste)
1 tbsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp red chili powder (adjust to taste)
1/2 tsp hing
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp garam masala
1/2 tsp amchur (dry mango powder) or lemon juice
2-3 tbsp oil or ghee
Fresh coriander leaves, chopped (for garnish)
Salt to taste
Instructions:
Step 1: Prep the Vegetables
1. Wash and cut the cauliflower into medium-sized florets. Soak them in warm salted water for 10 minutes to remove any impurities. Drain and set aside.
2. Peel and cube the potatoes into bite-sized pieces.
Step 2: Cook the Aloo and Gobi
1. Heat 1 tbsp oil in a pan. Add the cauliflower florets and sauté for 3-4 minutes until slightly tender. Remove and set aside.
2. In the same pan, add the potato cubes and sauté for 4-5 minutes until they are partially cooked. Remove and set aside.
Step 3: Prepare the Masala
1. Heat the remaining oil or ghee in the same pan. Add cumin seeds and let them splutter.
2. Add chopped onions and sauté until golden brown.
3. Add ginger-garlic paste and green chilies. Sauté for 1-2 minutes.
4. Add chopped tomatoes and cook until they turn soft and the oil separates from the mixture.
5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
Step 4: Combine and Cook
1. Add the partially cooked potatoes and cauliflower to the masala. Mix gently to coat the vegetables with the spices.
2. Cover and cook on low heat for 10-15 minutes, stirring occasionally, until the vegetables are fully cooked and tender.
3. Sprinkle garam masala and amchur (or lemon juice) for a tangy flavor. Mix well.

Step 5: Garnish and Serve
1. Garnish with freshly chopped coriander leaves.

Tips:
Do not overcook the cauliflower, as it can become mushy.
For a richer flavor, you can add a splash of cream or yogurt at the end.
If you prefer a drier texture, cook uncovered for the last few minute
