Ingredients:
– 1 medium-sized bottle gourd (lauki)
– 1 onion, finely chopped
– 2 tomatoes, finely chopped
– 2 cloves garlic, minced
– 1-inch piece of ginger, minced
– 1 green chili, chopped (adjust to taste)
– 1/2 tsp cumin seeds
– 1/2 tsp turmeric powder
– 1 tsp coriander powder
– 1/2 tsp cumin powder
– 1/2 tsp red chili powder (adjust to taste)
– Salt to taste
– 2 tbsp oil
– Fresh coriander leaves for garnish

Instructions:

1. Peel the bottle gourd, remove seeds, and cut it into small cubes.

2. Heat oil in a pan or kadai. Add cumin seeds and let them splutter.

3. Add minced garlic, ginger, and green chili. Sauté for a minute until they turn fragrant.

4. Add chopped onions and sauté until they become translucent.

5. Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a couple of minutes.

6. Add the chopped tomatoes and cook until they soften and the oil begins to separate from the masala.

7. Add the bottle gourd pieces and mix them with the masala.

8. Cover the pan and cook on low heat for about 15-20 minutes, stirring occasionally, until the bottle gourd becomes tender.

9. If needed, sprinkle a little water to prevent sticking and burning.

10. Once the bottle gourd is cooked, garnish with fresh coriander leaves.

11. Serve hot with roti or rice.
