The mixture is then set in a tray to cool and solidify, after which it is cut into square or diamond-shaped pieces. Ghiya Barfi has a soft, fudgy texture and a mildly sweet taste, making it a popular treat during festivals and celebrations in India.

Here’s a simple recipe for Ghiya Barfi (Bottle Gourd Barfi):

Ingredients:
– 2 cups grated bottle gourd (ghiya/lauki)
– 1 cup khoya (mawa)
– 1 cup sugar
– 1/2 teaspoon cardamom powder
– 2 tablespoons ghee (clarified butter)
– Chopped nuts for garnishing (optional)

Instructions:
1. Heat a non-stick pan and add ghee to it. Once the ghee melts, add the grated bottle gourd and sauté it on medium heat until it becomes soft and the water evaporates. This might take around 10-15 minutes.

2. Add the khoya to the pan and mix well with the bottle gourd. Continue to cook for another 5-7 minutes, stirring frequently.

3. Now, add the sugar and cardamom powder to the mixture. Keep stirring until the sugar dissolves and the mixture thickens. It should start leaving the sides of the pan.

4. Once the mixture reaches a fudge-like consistency and starts leaving the pan, turn off the heat.

5. Transfer the mixture to a greased tray or plate and spread it evenly. You can use the back of a spatula to smoothen the top.

6. If using chopped nuts, sprinkle them on top of the mixture and gently press them down.

7. Let the mixture cool down for a few hours. Once it’s completely cool and set, cut it into squares or diamond shapes.

8. Your Ghiya Barfi is ready to be enjoyed! Store it in an airtight container.
