Ingredients –
1. Coriander Seeds (Dhaniya) – ¼ Cup
2. Toor Dal – 1 tbsp
3. Chana Dal – 1 tbsp
4. Urad Dal – 1 tbsp
5. Cumin Seeds (Jeera) – 1 tsp
6. Fenugreek Seeds (Methi Dana) – ¼ tsp
7. Black Pepper Corns – ½ tbsp
8. Mustard Seeds (Rai) – 1 tsp
9. Dry Red Chillies – 10 to 12 nos.
10. Desiccated Coconut – 1 tbsp
11. Asafoetida (Hing) – ½ tsp
12. Turmeric Powder (Haldi) – 1 tsp
Method –
1. In a preheated pan, take ¼ cup of Coriander Seeds (Dhaniya) and dry roast it nicely on low flame until turns aromatic and colour changes.
2. Once roasted well, transfer to grinder and keep aside.
3. Now take, 1 tbsp of Toor Dal, 1 tbsp of Chana Dal, 1 tbsp of Urad Dal, 1 tsp of Cumin Seeds (Jeera), ¼ tsp of Fengureek Seeds (Methi Dana), ½ tbsp of Black Pepper Corns and dry roast this also on low flame until turns aromatic and changes its colour.
4. Once roasted well, transfer to grinder and keep aside.
5. Then take 1 tsp of Mustard Seeds (Rai) and roast on low flame.
6. To that add 10 to 12 nos of Dry Red Chillies and roast that also on low flame.
7. Then to roasted chillies add 1 tbsp of Desiccated Coconut, 1 tsp of Turmeric Powder (Haldi), ½ tsp of Asafoetida (Hing) and roast well until turns aromatic and color changes.
8. Once roasted well, transfer to grinder and keep aside.
9. Allow all the roasted spices to cool down completely and then grind into fine powder.
10. Sambar Masala Powder is ready, store in any air tight container and keep in fridge for months.

1. Store in air tight container and in fridge for long life.
