INGREDIENTS:
Chicken: 750 gms
Turmeric powder: 1/2 tsp
Salt: 1/2 tsp
Jeera: 1 tbsp
Whole peppercorns: 1 1/2 tbsp
Kashmiri chilli powder: 3/4 tbsp
Garlic cloves: 5-6, lightly crushed
Ginger: 1 inch, lightly crushed
Tomato: 1 large, chopped
Onion: 1 large, sliced.
Coconut oil: 2-3 tbsp
Curry leaves: 3-4 sprigs
Vinegar: 1 tsp
Extra salt as needed.

METHOD:
Grind coarsely jeera and whole peppercorns and keep this aside.

Marinate chicken pieces with turmeric and salt and keep this aside while we get the rest of the ingredients ready.

Heat a kadai or pan with coconut oil, add in curry leaves and crushed ginger and garlic. Stir well and allow this to lightly brown.

Add in the sliced onion, mix well and allow this to lightly brown.

Once onion starts to brown add in tomato and salt, mix well. Allow the tomato to fry/roast for 2-3 mins.

Once done, simmer the fire and add in kashmiri chilli powder, turmeric powder, and crushed jeera and whole peppercorns. Mix well on low flame for 2 mins.

Add in chicken and with flame on high mix the chicken very well and then roast the chicken on medium flame for 5 minutes, in between stir the chicken. After 5 mins add curry leaves and cover and cook the chicken.

Open the lid, mix the chicken…again cover and allow the chicken to cook well.

Open lid, chicken is nicely cooked and coated with the masala. Mix well scraping the sides. Add in vinegar and mix well. Roast again for a few more minutes. Add in curry leaves and mix well. Serve with roti, rice, chappathi …
