Nankhatai or nancuts are eggless cookies, also known as Indian shortbread cookies.
Once the shortening is rubbed into the flour, make into small balls and place on a parchment (butter paper) if you do not have a baking mat. I made it in two batches.
Bake them for 18-20 mins in a preheated oven (180 degree C) or until the center is a bit soft and the sides are crisp.
There is not vanilla essence in this recipe; if you prefer you can add vanilla or almond essence.
