Sharing my version of popular cocktail with white rum. For non-alcoholic version, you can omit the rum and add more soda water.
Ingredients:
Mint/Pudina Leaves: 8
Lemon: 1/2, cut into wedges.
Sugar: 1 heaped tbsp.
Ice cubes: 15, crushed.
White rum: 50 ml
Soda: About half cup or to fill glass.
Garnish:
Mint leaves and lemon slice.
Method:
First crush ice; add the ice cubes into a kitchen towel and smash it on the kitchen counter or use a rolling pin.
Into a sturdy glass, add in mint leaves, lemon wedges, and sugar. Muddle or squash with a muddler or the back of a wooden spoon or whisk.
The granulated sugar acts as an exfoliater to the mint leaves and helps the essential oils in the mint leaves to come out and for this reason, I do not like to use simple syrup (equal parts of raw sugar and water is boiled and simmered for a few minutes and allowed to cool down).
Top with crushed ice (almost 3/4 of the glass) and pour 50 ml white rum, give it a stir and pour club soda over it. Again give a light stir and serve with a sprig of mint leaves and a slice of lemon. Enjoy Summer!
