Ingredients for 30 minute Chicken Stir Fry:
Prep Time – 15 mins
Cooking Time – 15 mins
Serves: 5- 6
(Tsp-Teaspoon; Tbsp-Tablespoon; Cup – 250 ml)

Stir Fry Sauce Mix:
2 tsp dark soy sauce
2 tsp red chilli sauce
2 tsp oyster sauce
1 tbsp arrow root powder
1 tbsp water

Seasoning for the Chicken:
Boneless Chicken – 500 gms (cut into bite sized pieces)
Sea Salt- 1/2 tsp
Black Pepper Powder- 1/2 tsp
Dark Soy Sauce- 1 tsp

Vegetables:
Onion 1 (80 gms)
Broccoli florets 1 cup (80 gms)
Carrots, sliced 1 cup (100 gms)
Red Bell Pepper 1 cup (100 gms)
Yellow Bell Pepper 1 cup (100 gms)
Garlic, chopped- 2.5 tsp (8 gms)
1/2 tsp sea salt
chopped spring onions (1 tbsp) optional

Other Ingredients:
Groundnut oil – 2 tbsp (wood pressed/cold pressed)
Black pepper powder: 1/2 tsp

Preparation:
Slice the boneless chicken breasts into bite sized pieces.
slice broccoli into small florets, slice the carrots, slice the onion, green, red & yellow peppers into cubes.
Also peel and chop the garlic
Process:
Into a bowl, add in the dark soy sauce, red chilli sauce, oyster sauce, arrow root powder, water and mix and keep aside.
Heat oil in a kadai or wok and add the chicken pieces. Add in the salt and stir fry on high flame for 2 mins.
After 2 mins on high flame, add in dark soy sauce and black pepper powder. Give a mix and allow the chicken to cook on high flame for another 3 mins. After 3 mins, open the lid and allow the water to evaporate. Another 3 mins later, the water is evaporated and allow the chicken to roast for 2 mins.
Remove and set aside on a plate.
Into the same pan, add in the oil, chopped garlic and allow the garlic to turn light golden brown about 30 secs. Add sliced carrots, broccoli, stir fry on high flame for 2 mins. Add in red, green, yellow capsicums and the onion. Add sea salt, black pepper, stir well. Add in the chicken pieces and stir fry for 2 mins on high flame. Add in the sauce mix, stir for 1 min, add the chopped spring onion. Stir and turn off the flame. Serve to a plate.
Notes:
Sauce does have salt; so add salt cautiously.
you can add any vegetables of your choice, mushrooms are also a good option.
Left overs can be refrigerated in an airtight container and will keep good for 3-4 days.
You can use this fillings in dosa with a drizzle of chilli sauce, you can use in sandwich fillings, enjoy as a side dish for rice, roti, noodles etc.
Arrow root powder, tapioca powder, potato powder are healthier alternatives to cornflour.
