**Apple Salad with Maple Dijon Vinaigrette**

Ingredients For Apple Salad:*
– 2 crisp apples, diced
– 1 red bell pepper, chopped
– 1/2 cucumber, diced
– 1 medium-sized tomato, diced
– 1 medium-sized onion, chopped
– 1.5 cups chopped tender lettuces or mixed greens
– 1 cup canned or cooked chickpeas, drained
– 2 tablespoons toasted and crushed walnuts or pecans
– 1/2 cup feta cheese or goat cheese crumbles
– 1/4 cup raisins or dried cranberries

For the Vinaigrette Dressing:
– 5 tablespoons olive oil
– 1 tablespoon white or apple cider vinegar
– 2 tablespoons honey/maple syrup
– 1 tablespoon Dijon mustard
– 1/4 teaspoon kosher salt
– Ground black pepper, to taste
– 1 teaspoon red pepper flakes (optional)

**Instructions:**

1. Begin by dicing the cucumber, chopping the red bell pepper, dicing the apples, dicing the tomato, and chopping the onion.
2. In a small bowl, whisk together olive oil, white or apple cider vinegar, honey/maple syrup, Dijon mustard, and black pepper. Add salt and red pepper flakes, then whisk again. Adjust the seasoning to taste.
3. Add chopped lettuces to a large salad bowl along with cucumbers, red bell peppers, apples, tomatoes, onions, and drained chickpeas.
4. Sprinkle the toasted and crushed walnuts, and raisins or dried cranberries over the chopped salad.
5. Drizzle the vinaigrette over the chopped salad ingredients. Gently toss to evenly coat all the components.
6. Sprinkle with feta or goat cheese crumbles and toss again. Plate the chopped salad and serve immediately as a refreshing side dish or a light main course.
