Sooji Toast 3 ways is a savory toast — a very simple, healthy, easy and filler dish. This is made with a blend of suji/sooji/rava aka semolina, some veggies, yogurt and some spices. The grainy texture of sooji along with veggies takes this toast to a whole new level.

Serves – 12 pieces

Ingredients
For Sooji Topping:
Semolina (Rava) – ½ cup
Yogurt – ½ cup
Water, if needed – 4-5 tbsp
Chopped onions – 1 large
Chopped carrots – 2-3 medium
Chopped tomatoes – 2 medium
Chopped coriander – 1 tbsp
Cumin seeds – 1 tsp
Chaat masala – 1 tsp
Red Chili powder – 1 tsp, or as per taste
Ground pepper – ½ tsp
salt to taste
For Toasts:
Whole wheat bread slices – 6
Oil for brushing and toasting
Instructions
For The Sooji Topping:
In a mixing bowl, add all the ingredients for topping and mix well. Add some water if needed.
For Sooji Tosat:
Spread the batter evenly on 2 bread slices and press them lightly so they don’t fall off the bread.
Heat a pan and brush with oil.
Place the sooji battered breads and let them cook from the bottom.
Flip them over, this time topping side is facing down. Cook them on a medium heat till the time the batter turn golden in color.
Cut into two pieces.
For Sooji Toast Waffle:
Spread the batter evenly on 2 bread slices and press them lightly so they don’t fall off the bread.
Brush waffle iron with oil.
Cook in the preheated waffle iron until golden brown, 5 to 7 minutes. Remove and cut into slices.
For Open Sandwich Sooji Toast:
Spread the batter evenly on 2 bread slices and press them lightly so they don’t fall off the bread.
Brush sandwich maker with oil.
Cook in a preheated sandwich maker according to manufacturer’s directions until it turns golden brown in color and cooked perfectly.
Cut into two pieces.
Serve them hot with some chutney or ketchup.
PS: Cool completely on wire rack before baking in a lunch box.
