No-Bake Cream Cheese Lemon Mousse

SERVES: 4

Ingredients for mousse:

Whipping cream – 400 ml
Powdered sugar – 1/2 cup 1/2 cup
Cream cheese at room temperature – 400g
Vanilla – 1 tsp
Lemon zest – 1 tbsp
Lemon juice – 1 1/2 tbsp

For Garnish:
White chocolate Shavings
Rainbow nonpareils or any other sprinkles (Optional)

Directions:
1. In a large bowl, using an electric hand mixer, whip together the whipping cream and sugar until stiff peaks form.
2. In an another bowl, using an electric hand mixer beat the cream cheese, sugar, and vanilla until light and soft.
3. Add the cream cheese mixture, lemon zest, and lemon juice into to the whipped cream mixture and fold in gently to combine well.
4. Transfer the mixture to a piping bag and pipe mousse into your serving glasses.
5. Refrigerate until chilled.
6. Sprinkle with white chocolate shavings and rainbow nonpareils and enjoy.
