INGREDIENTS
✿ Potatoes peeled – 4 large
✿ onions – 4 large or 8 small
✿ Oil for frying
✿ Salt – 1 tsp
✿ For gravy
✿ Oil – 4 tbsp
✿ Cumin seeds – 1 tsp
✿ Bay leaf -1
✿ Onion paste – 3/4 cup
✿ Ginger-garlic paste – 2 tbsp
✿ Tomato puree – 3/4 cup
✿ Green chillies chopped – 2
✿ Salt to taste
✿ Kitchen king masala – 1 tsp
✿ Coriander powder – 1/2 tbsp
✿ Kashmiri red chili powder – 1/2 tbsp
✿ Turmeric powder – 1/2 tsp
✿ Garam masala powder – 1/2
✿ Butter – 1 tbsp
✿ Greek yogurt or any thick yogurt – 2 tbsp
✿ Fresh cream – 4 tbsp
✿ Kasuri methi – 1 tbsp
✿ Water – 1/2 cup or as required
✿ Chopped coriander for garnish

15 Minutes 25 Minutes 40 Minutes

INSTRUCTIONS:
1.Cut potatoes into 4 pieces and prick them with the fork.
2.Cut onions into 4 pieces. Boil water in a pot and add salt to it.
3.Add potatoes and cook covered for 5-7 mins.
4.Drain potatoes on an absorbent paper and set aside.
5.Add onions to the same water and boil covered for 5-7 mins.
6.Drain onions on an absorbent paper and set aside.
7.Heat enough oil in a pan and fry potatoes and onions. Drain on an absorbent paper
and set aside.
8.Heat oil in another pan. Add cumin seeds and bay leaf. When the seeds start to
splutter add onion paste.
9.Mix well and sauté for 4-5 mins.
10.Add ginger-garlic paste and green chilies. Cook for 2 mins.
11.Add kitchen king masala, coriander powder, Kashmiri red chili powder, turmeric
powder and garam masala Mix well and cook for 2-3 mins.
12.Add tomato puree and salt. Mix well and cook covered for 5 mins.
13.Add Kasuri methi along with yogurt and cream. Mix well and cook for a minute.
14.Add water and mix well. Now add fried potatoes and fried onions.
15.Coat well and add butter.
16.Mix again and cook covered for 3-4 mins.
17.Add chopped coriander and mix well. Remove from heat.
18.Garnish with Kasuri methi, coriander and drizzle with some cream.
19.Serve with hot naan or any other flat bread. Enjoy!
NOTES:
1. This recipe is for a spicy curry, but feel free to adjust spices according to your taste.
2. Add vegan cream and vegan yogurt to make it vegan.

  • I'm sorry to ask but just two questions..The potatoes you use are they the floury variety or waxy..I'm assuming floury because you've deep fried them secondly the tomato puree is that just whizzed fresh tomatoes or tomato concentrate..In the UK puree usually means concentrate but In India it's usually whizzed tomatoes and this is what I would have assumed only it did have that very deep red colour of the concentrate..Great recipe and subscribed 🙂
