Egg Curry aka Anda Curry is the most alluring way of presenting eggs. Eggs are first boiled, then peeled. And then simmered in onion tomato-based deliciously spiced sauce which is mildly hot. And plus, this is ready under 30 minutes. 🙂

Serves: 4
Ingredients:
Hard boiled and peeled eggs – 4 (Boil eggs for 10-12 mins)
Tomato puree – 3/4 cup
Water – 1/2 cup
Onions, chopped – 1/2 cup
Green chilies, chopped – 2
Turmeric powder – 1/2 tsp
Red chili powder – 1 1/2 tsp (or according to your taste)
Coriander powder – 2 tsp
Garam masala powder – 1 tsp (I am not using whole garam masala so I used more ground garam masala for that flavor burst)
Salt to taste
Green coriander leaves, chopped – 2 tbsp
1. Heat oil in a pan. Add cumin seeds.
2. When they start o splutter add chopped onions and chopped green chilies.
3. Sauté for 2 mins and add turmeric powder. Mix well and sauté for 2 mins
4. Add salt, chili powder, coriander powder and garam masala powder.
Mix well and cook for 1 minute.
5. Add tomato puree, mix well and cook for a minute.
6. Add water and cook covered for 5-7 mins. Stir occasionally.
7. Add boiled eggs and coriander leaves. Cook for 2-3 mins.
8. Add cream and cook for 2 minutes.
9. Remove from heat and serve hot with naan or rice.
