Sookha Kala chana is a simple and quick dry chickpeas curry which is prepared with soaked and cooked black chickpeas known as kala chana in Hindi. In this recipe, chickpeas are boiled first and then sautéed with spices. This recipe doesn’t contain any onion or garlic. This goes so well with flatbreads like roti, chapati, paratha or naan.

Ingredients:

For the kale chane / black chickpeas – 1 cup (soaked overnight)
Oil – 2 tbsp
Cumin seeds – 1 tsp
Mustard Seeds – 1 tsp
Pinch of asafetida
Ginger, sliced – 2 tsp
Green chili, sliced – 4
Red chili powder – 1 tsp
Turmeric powder – 1/2 tsp
Coriander powder – 2 tsp
Amchoor / dried mango powder – 2 tsp
Salt to taste

Soak the kale chane / black chickpeas overnight in enough water. Next morning, drain the water and rinse well.
Pressure cook the chana with 2 cups of water and salt for 2-3 whistles on high heat.
Or boil in a pan until soft and cooked, boiling in a pan would take about 30 minutes.
Heat oil in a broad pan, and add cumin seeds, mustard seeds, and asafetida.
When the seeds start to splutter add green chilies and ginger.
Stir well and cook for about 2 minutes.
Now add the chili powder, turmeric powder, coriander powder and dried mango powder and roast well for 2 minutes.
Add cooked chana with water and cook for 5 minutes.
Add chopped coriander and mix well.
Remove from heat and transfer to a serving dish.
Your kale chane are ready!
