Apple Hand Pies

These apple hand pies are pretty easy and simple to make. Plus they taste awesome. Eating them is a sensual experience in itself because they are buttery, flaky, crisp on the outside and luscious and sweet inside.

Makes: 8-10 pies

Ingredients

!For Apple Pie Filling:

Apples, apples, peeled and diced – 3
Lemon juice – 1-1/4 teaspoons
Water – 1-1/2 cup
Powdered sugar – 1/2 cup
Brown sugar – 1/4 cup
Cornstarch – 2 tbsp
Ground cinnamon – 1/2 tsp
Salt – 1/8 teaspoon

!For Hand pies:

Apple pie filling
Frozen puff pastry thawed and kneaded – 4 sheets
!For serving:
Sliced almonds
Apple pie filling or vanilla ice-cream(Optional)

Instructions for apple pie filling:

1. In a large bowl, toss apples with lemon juice and set aside.

2. Boil water in a pan.

3. Combine sugars, cornstarch, cinnamon and salt in a bowl.

4. Add apples and boil for a minute.

5. Add cornstarch mixture and to water, stir well, and bring to a boil.

6. Boil for 2 minutes, stirring constantly.

7. Reduce heat to low, cover and cook until apples are tender, it would take about 6-8 minutes.

8. Let it cool for 30 minutes.

Instructions for hand pies:

1. Preheat oven to 180°C.

2. Use a 5 inch round cookie cutter to cut the dough into circles.

3. Roll again the dough if needed. We need about 8-10 circles.

4. Add one heaping tbsp of apple pie filling (without liquid) to the center of each dough circle.

5. Fold the dough in half and use a fork to seal the edges.

6. Place hand pies on lined baking tray.

7. Use the tip of a sharp knife to cut few diagonal slits into the tops of each pie.

8. Use a pastry brush to lightly brush the tops of the hand pies with the melted butter.

9. Roll the dough until it is about 1/8-inch thick on a floured work surface.

10. Bake the pastry pies for 25-30 minutes, or until the tops are lightly golden brown.

11. Brush with more butter and sprinkle with sugar and almonds. Enjoy.
