ഹോട്ടലിൽ സ്റ്റൈലിലുള്ള കറി ഗ്രേവികുറെ നാൾ ഫ്രിഡ്ജിൽ സൂക്ഷിച്ചു വെക്കാം/Restaurant Style Red Gravy
Description :
This restaurant-style red gravy can be prepared in advance and stored in the refrigerator for a week or in the freezer for 3-4 months. If you are storing in the freezer, it will be convenient if you freeze them in an ice tray and make cubes. Many curries like butter chicken, mutter paneer, vegetable curry, egg curry, fish curry, potato curry etc can be prepared quickly with this as the gravy. I will be sharing some of those recipes in my upcoming videos.
Ingredients:
Onion – 2 big (Finely chopped)
Tomato – 1 kg (Chopped)
Ginger – 1 big piece (Finely chopped or crushed in mixie without adding water)
Garlic – 2 bulbs (Finely chopped or crushed in mixie without adding water)
Green chilly – 5 small (Finely chopped)
Cashew nuts – 1 handful
Cinnamon – 2 small pieces
Star anise – 2 small
Cumin seed – ½ tbsp
Turmeric powder – ¾ tbsp
Coriander powder – 2 tbsp
Red chilly powder – 2 tbsp
Salt
Vegetable oil
Steps:
Heat oil in a pan.
Add cumin seeds.
Add cinnamon and star anise.
When it becomes hot, add onion, green chilly, ginger, garlic and cashew nuts.
When the onion starts to brown, lower the flame and add turmeric powder. Sauté till the raw smell goes away.
Add coriander powder and sauté till the raw smell goes away.
Add red chilly powder and sauté till the raw smell goes away.
Add tomato and salt.
Cover and cook on medium flame till the tomatoes are done.
Switch off.
Once this cools down a bit, grind it to a smooth paste in batches.
Transfer the paste to a clean dry pan.
Switch on the stove and cook covered on low-medium flame for 30 minutes on a small burner.
Switch off and transfer to refrigerator/freezer after cooling.

I made this gravy. Very easy and tasty. You can even eat this gravy with dosa or chappathi. I made butter chicken and egg curry with this gravy. Turned out well. This is especially useful when guests are there. Quick and easy. Shelf life is also good.
