CAKE BATTER
Plain flour – 1 ½ cup
Sugar – ¾ cup
Custard powder – 4 tbsp
Baking powder – 1 ½ tsp + 1 pinch
Milk – 1 cup + 4 – 6 tbsp
Oil – ½ cup
Vanilla essence – 1 tsp
FIRST LAYER
Milk – 1 cup
Custard powder – 1 tbsp
Sugar – ¼ cup
SECOND LAYER
Custard powder – 4 tbsp
Water – 1 ¾ cup
Hi everyone, today let’s see how to make a delicious custard pudding cake..
To prepare the cake batter, into a large mixing bowl, sift in one and half cup of plain flour, ¾ cup of powdered sugar, 4 tablespoons of custard powder and 1 ½ teaspoon + a pinch of baking powder and mix well
Next add a cup of milk and mix it really well until no lumps are left.. then add ½ cup of oil and combine really well with the batter.Take your time and combine the oil really well with the batter until no oil remains separate..
Next I am going to add four to six more tablespoons of milk to adjust the consistency of the batter..
Next add a teaspoon of vanilla essence and the cake batter is now ready..
Next, grease a cake tin with some oil and dust the inside of the tin with some plain flour and type off the excess flour.. next, pour the cake batter into the tin and bake it in the oven (375F or 175C) or on the stove for around 30 minutes or until well done..
Tap the cake tin before you leave it to bake, to get rid of excess air bubbles.. I am going to sprinkle some dried cranberries on top of the cake, this is completely optional..
Bake on the centre rack of the oven..
To prepare the custard sauce, mix a tablespoon of custard powder in one cup of milk, place it on the stove and let it start to heat up..
When the sauce starts to bubble from the sides, add ¼ cup of sugar and mix well
When the custard sauce and the cake completely cool down, prick some holes on the cake with a skewer or a toothpick and then pour the prepared custard sauce on top of the cake..
keep aside two or 3 tablespoons of custard sauce to be used while serving..
After pouring the custard sauce, leave it in the refrigerator to chill.
To make the final custard layer, mix 4 tablespoons of custard powder in 1 ¾ cup of water and bring it to a boil and let it thicken up into a smooth and thick paste without any lumps..
Once the mixture thickens up, let it cool down, and add it on top of the refrigerated custard cake and put it back in the refrigerator again, to chill..
After about three hours, take out the cake and cut.
Cut out a piece onto a serving plate and pour some custard sauce on the piece of cake and serve!
