ഓണം സ്പെഷല് അവിയല് -KERALA AVIAL /EPISODE 25
Description :
Ingredients:
Drumsticks – 2
Carrot – 2
Brinjal – 3 small
Green beans – 15
Potato – 2
Raw plantain – 1
Onion – 1 medium
Green chilly – 10 (Slit open)
Curry leaves
Turmeric powder – ½ tsp
Salt
Coconut oil
To grind:
Grated coconut – 1 big
Green chilly – 3
Shallots – 1 big
Cumin seeds –½ tsp
Curd / Yogurt – 2 tbsp
Steps:
Cut the vegetables lengthwise into 2″ long pieces.
Add plantain, carrot, drumstick and onion along with green chillies, turmeric powder and salt. Mix well.
Add water to cook the vegetables. Cover and cook on low flame.
Stir often.
When these vegetables are half cooked, add in beans, potato and brinjal.
Cover and cook on low flame. Add water, if required.
Vegetables should be soft, but not mushy.
Pulse grated coconut, green chilly, shallots, cumin seeds and curd without adding water.
Do not grind fine. It should be a coarse paste.
Add this to the cooked vegetables and mix well.
Cover and cook on low flame for another 2-3 minutes.
Add some coconut oil and curry leaves.
Switch off and transfer it to a serving bowl.
Enjoy the aviyal!
Note: You can add vegetables like yam, cucumber, bitter gourd, long beans, ash gourd or any vegetables of your choice
