Ingredients:
Potato – 6 medium (Choose long variety)
Chicken – 500g (Cut into small pieces)
Onion – 1 medium (Finely chopped)
Capsicum – ¼ of a big one
Ginger – 1 small piece
Coriander leaves
Cashew nut (Chopped)
Soya sauce – 2¼ tbsp
Vinegar – 1 tbsp
Crushed red chilly / Chilly flakes
Salt
Oil
Breadcrumbs (Recipe – http://y2u.be/X7UTKb3fcpc)
Egg – 2 (Beaten)
Pepper powder
Steps:
Peel the potatoes and cut them to thin slices.
Leave them in salt water till ready to use.
Grind chicken, ginger, half of the onion, half of the capsicum and half of coriander leaves without adding water. (Add green chilly also, if you prefer more spice)
Transfer it to a bowl.
Add remaining onion, capsicum and coriander leaves.
Add cashew nuts and salt.
Add soya sauce, vinegar and crushed red chilly.
Mix well.
Beat the eggs well and season with some salt and pepper.
Take two slices of potato and pat them dry.
Place a few spoons of the chicken filling on a potato slice and close the sandwich with another slice.
Gently press from top and sides.
Repeat for the rest of the potatoes.
Dip each sandwich in beaten egg and roll in breadcrumbs.
Heat oil in a pan and deep fry each sandwich.
Once one side is cooked, switch to medium flame.
Flip and cook both sides.
Enjoy the hot snack with some ketchup.
