Vendakka Curry | Kerala style ladies finger curry | Bhindi curry with gravy

Ingredients:
Ladies finger / Okra / Bhindi – ½ kg (Chopped into 2” pieces)
Onion – 1 small (Thinly sliced)
Ginger – 1 big piece (Crushed)
Garlic – 4 fat cloves (Crushed)
Green chilly (Slit open)
Curry leaves
Tomato – 2 small (Chopped)
Turmeric powder – ½ tsp
Coriander powder – 1 tbsp
Red chilly powder – To taste
Cumin powder – ¼ tsp
Coconut milk – Milk of ½ of a coconut
Tamarind (Soaked and juice extracted)
Salt
Coconut oil
Mustard seeds – ½ tsp
Fenugreek seeds – ¼ tsp
Dried red Chillies
Shallots
Turmeric powder – ¼ tsp
Red chilly powder – ¼ tsp
Steps:
Clean and wipe each ladies finger dry before chopping them. This is done to prevent stickiness.
Heat coconut oil in a pan.
Add onion, ginger, garlic, green chilly and curry leaves.
Once the onion turns golden, lower the flame and add turmeric powder. Sauté till the raw smell goes away.
Add coriander powder and sauté till the raw smell goes away.
Add red chilly powder and cumin powder and sauté till the raw smell goes away.
Add ladies finger and mix well.
Add salt and sauté on medium flame till the ladies finger becomes soft.
Do not cover and cook.
Add tomato and salt.
Cover and cook on medium flame till the tomatoes are done.
Add coconut milk.
Increase the flame and bring it to boil.
Do not cover.
Add tamarind, as required.
Add salt, if required.
Once the gravy boils, switch off.
Heat oil in a pan for tempering.
Add mustard seeds and let it splutter.
Add fenugreek, dry red chilly and shallots.
Add turmeric powder and roast on low flame.
Add red chilly powder and roast on low flame.
Add this to curry and mix well.
Transfer to a serving bowl and enjoy!
