Royal Chicken Curry/Excellent for chapati, puri & Rice
Description :
Ingredients:
Chicken – 1 kg (Cut into medium pieces)
Onion – 2 big (Thinly sliced)
Turmeric powder – ¾ tbsp
Red chilly powder
Curd – 5 tbsp
Kasoori methi
Bay leaf – 5 small
Salt
Oil
To grind
Grated coconut – 5 tbsp
Green chilly – 3-4
Cashewnut – 1 handful
Ginger – 1 big piece
Garlic – 5 fat cloves
For garam masala –
Whole pepper – ½ tbsp
Fennel seeds – 1 tbsp
Cumin seed – 1 tbsp
Cinnamon – 1 piece
Cardamom – 12
Cloves – 14
Star anise – 2
Mace – 1 small piece
Steps:
Dry roast the whole spices (except bay leaves) until hot to touch.
Then powder it finely.
Heat oil in a pan and fry onion till crispy.
Separate layers before frying.
Once it starts to turn golden, add a pinch of turmeric powder.
Once the raw smell goes, switch off and remove from the pan.
Once cool, grind to a smooth paste without adding water.
Grind ginger and garlic to a smooth paste. Add some oil and grind, if it is not possible to grind smooth.
Grind coconut, green chilly and cashew nuts to a smooth paste adding some water.
Heat oil in a pan and add bay leaves.
Add ginger garlic paste.
Sauté till the raw smell goes away.
Add onion paste and mix well on medium flame.
Add turmeric powder and sauté till the raw smell goes away.
Add red chilly powder and sauté till the raw smell goes away.
Add curd and mix well.
Once the curd gets mixed well, increase the flame and add chicken and salt.
Add 1½ tbsp of the ground garam masala.
Add enough water for the gravy.
Cover and bring it to boil.
Stir well and switch to medium flame.
Cook for another 15 minutes.
Once ¾ cooked, add coconut paste.
Cover and cook for 5 minutes on medium flame.
Add kasuri methi.
Royal chicken curry is ready.
Serve with chapathi, basmati rice or fried rice.
